Dairy-Free and Nut-Free Dessert Recipe: Raspberry Lemon Sorbet

Finding desserts that won't trigger allergies can be a real struggle. When I eat at a restaurant, I often skip dessert because there are no dairy-free or nut-free dessert options. However, I always jump at the chance of ordering sorbet. With my dad's help, I came up with a sorbet recipe that you can make at home. You can store it in your freezer and eat it whenever you crave something sweet. Enjoy!



Ingredients:

2 pints raspberry

3 cups water

3 cups organic sugar

¾ cups fresh squeezed lemon juice

1g guar gum

Directions:

  1. Wash and drain the raspberries.

  2. In a saucepan, combine the raspberries, sugar, and water. Bring to a gentle boil and simmer for 15-20 minutes until the raspberries are soft and mushy. Strain the mixture to remove the raspberry seeds and skins. Pour the mixture into a container and refrigerate overnight.

  3. The next day, combine the lemon juice, raspberry mixture and guar gum. Slowly whisk the mixture to dissolve the guar gum.

  4. Pour the mixture in a sorbet/ice cream machine and follow the machine’s instructions.
